Gross profit comes from recorded sales: quantity sold, selling price, any discount and the cost kept for that sale. Stock balance is the quantity still on hand. Count your physical stock before starting, then record each movement.

The minimum level is not decoration. It decides when the Dashboard raises a warning, so set it based on how long your supplier takes to deliver new stock.
The Supplier Restock tab records incoming goods along with supplier cost, and Restock History keeps that record. Do not mix it with count corrections — both look the same on the balance, but only one affects your costs.
Once a month, compare a physical count against the balance in Yujim. Small, frequent gaps usually mean unrecorded sales; large, occasional gaps usually mean a counting error.
